INGREDIENTS:
- 1/2 cup oatmeal
- 1/2 cup of Greek yogurt
- 1 egg white
- 1/3 cup water
- 1 tablespoon of vanilla extract
- 1 tablespoon yacon syrup (or your favorite sweetener)
- A pinch of salt
TOPPINGS:
- 5 fresh strawberries
- 2 tablespoons of Femme Fatale cream
PREPARATION
Step 1. Wash and cut strawberries. Add a little femme fatale to each strawberry wedge.
Step 2. In a bowl, add the batter ingredients and mix well until smooth.
Step 3. In a skillet over medium heat, cook the mini pancakes. Flip when bubbles start appearing. I cooked each side for 2 minutes each.
Step 4. Serve in a plate, adding strawberries and yacon syrup for added sweetness.
